Som Tam Carrot, carrot sald with Thai herbs

Chef God Keawpeth - Le Chantara Restaurant - Santhiya Koh Phangan Resort & Spa

This is a recipe of Chef God Keawpeth at the Chantara Restaurant, Santhiya Koh Phangan Resort & Spa.  

Ingredients for 2 persons 

2 pcs carrots
4 pcs garlic cloves
6 pcs green Thai chilli
2 pcs tomatoes cut into wedges or cherry tomato whole
50 gr green beans
1 tbsp fish sauce
1 tbsp lime juice
1 tbsp palm sugar
3 tbsp roast peanuts

Method

Peel the carrot and shred with a grater
Place the garlic and the chilies in a mortar and mash with a pestle and gently combine all ingredients by mixing with the pestle and a spoon. Serve cold.

Remark : you can also add some sliced fruits to the salad and can be serv together with B.B.Q chicken.

Chef tip: this salad is delicious served with sticky rice. The carrot must be fresh and firm.
