The Culinary Art in the Yucatan Haciendas

Cooking is an ART in the Yucatan haciendas: Hacienda Puerta Campeche, Hacienda Santa Rosa, Hacienda San Jose, Hacienda Temozon, and Hacienda Uayamon. At the height of beauty, with the same spirit, the hacienda chefs create art according to tradition.

Brief History of Yucatan cuisine

The traditional cuisine of the Yucatan is a mix of European flavors and Mexican spices, called "mestizo" cuisine.

The history of this region of Mexico provides the explanation.  Long ago, the Yucatan was a remote region with little contact within its own country due to the surrounding mountains and the poor condition of its roads, making this region difficult to access.  In contrast, the Yucatan has always turned to its very active sea ports which have resulted in strong influences from Europe (especially France and Spain), New Orleans, and Cuba. Naturally, the Yucatan’s architecture, culture, and gourmet cuisine have been influenced as a result of all those external inputs.

The hacienda kitchen

At Hacienda Temozon, most of the ingredients used in the kitchens are from the gardens, the bread is homemade and the fish comes from the Yucatan coast ports.

The hacienda chefs use the same ingredients as those used by the Maya: maize, beans, tomatoes, chilies, chaya (a cousin of spinach), lawyers, Seville oranges, chicken, beef, cilantro, garlic, olives, oregano, and rice...

Hacienda Restaurants

The hacienda restaurant menus offer a mix of regional and international cuisine and the talented chefs will not leave you unmoved.

The Executive Chef Christian Bravo oversees the chefs.

At Casa Principal, the Hacienda Temozon Restaurant, customers can feast on dishes from Chef Julio Ku.

At La Guardia, the Hacienda Puerta Campeche restaurant, Chef Rafael Esparza will dazzle you with his refined cuisine.

At Hacienda Uayamon, the restaurant is located in the main building under the leadership of Chef Polar Fosado.

At Hacienda San Jose is the Chef Reyes Santos, who directs the restaurant kitchen.

At Hacienda Santa Rosa, the restaurant is located on the very nice patio, but you can install your table wherever you want to discover the creations of Chef Jose Gudalupe. You can sit beside the pool, opposite the botanical garden in the yard of your suite, or on the patio decorated with candles under the stars (there is a telescope to admire the moon).
