Gilles Choukroun is the chef who created a scandal several years ago…because of a crème brulee of foie gras and peanuts! In France, the country known for gastronomy, altering the sacred foie gras is a sin of its own right.
The cuisine of Gilles Choukroun personifies his bold, rock and roll attitude through more than just this one small plate.
A rapid journey!
Gilles Choukroun was an early entrepreneur, he was only 24 years old when he opened his first restaurant; le Relais d’Authou, in Eure-et-Loire. Soon afterwards came l’Angl’Opera, le Café des Délices and le MBC
Between the creation of Generation C— a group of chefs with similar tastes, being a star on popular Cooking Television shows, consultations for major hotel chains, writing his books, running his restaurant and various other projects, this chef never stops working.
The restaurant MBC
Opened in 2009, le MBC thoroughly sums up the character of Gilles Choukroun and his cuisine: colorful, affordable, and unexpected. The chef had the boldness to decorate the restaurant’s interior with graffiti, combining the outside ambiance with the interior dining area just as he assembles cherries and truffles. Le MBC is not a museum of contemporary art, it’s better; it’s a place that never existed before. For Gilles Choukroun le MBC “is not an accident, it’s my story that I tell.”
Choukroun Philosophy
“Cooking is a creative and contemporary art.” The traditional process is necessary and mundane but for Choukroun, “it’s necessary to break the rules” so that “cooking is not a weight on the shoulders of young people.” In this spirit of desecration Chakroun is favorable to cooking shows on TV, even if, according to him, France has yet to establish a channel with decent creative cooking shows.
