Hummus

Chef Dursun Usta - Restaurant - Hôtel Selçuklu Evi

Dursun Usta, Chef at the restaurant Selçuklu Evi, in Urgup, a town in Cappadoccia, Turkey, presents us with this famous hummus recipe.  

Ingredients

1 kg chickpea
200 gr ground sesame seed
1 lemon
150 gr hazelnut
20 gr salt
1 spoon yogurt
1 tea spoon powdered red pepper
50 gr sunflower seed oil
20 gr garlic

Method

Boil the Chickpeas. Then grind them twice in a blender or cuisinart.

Mix all the ingredients besides the pepper and hazelnuts.

Let stand a half hour and then place the pepper and hazelnuts on top.

Then it is ready to serve.
