Gaeng Khiew Waan Gai, green curry with chicken

Chef God Keawpeth - Le Chantara Restaurant - Santhiya Koh Phangan Resort & Spa

A fragrant and creamy curry from Chef God Keawpeth at the Chantara Restaurant, Santhiya Koh Phangan Resort & Spa.  

Ingredients for 2 persons 

3 tbsp green curry paste
800 ml coconut milk
350 gr chicken
2 pcs Kaffir lime leaves
1 tbsp fish sauce
1 tbsp white sugar
150 gr eggplant
5-10 pcs basil

Directions

Heat 1 cup of coconut milk until it begins to have an oily sheen then add the curry paste and stir well before adding the chicken.
Add more coconut milk and lime leaves, fish sauce and sugar. Bring it all to a boil then add the eggplant and simmer until the chicken is cooked and add the basil and chilli.

Remove from heat and  serve.
