A recipe by Chef Alberto Gonzalez, chef of the restaurant La Higuera at the Tamarindo Beach and Golf Resort, on the Pacific Ocean on the coast of Mexico.
Ingredients
Filet of Fish
Diced Mango
Diced Papaya
Diced Pineapple
Diced Guava
Diced Strawberry
Coriander Leaf
Guajillo Chili
Ginger
Sugar
White Vinegar
Preparation
Sauce
With the sugar, heat to a caramel and mix in the ginger. Add the vinegar and let the sauce thicken a bit. Add in all of the fruits; the fresh coriander and the chili.
The Fish
Season the fish fillets and cook a la plancha (Grill or Sear the Fish).
Present the dish on plates with a side dish of rice. Coat the golden cooked fish with some coconut milk, and top the steamed rice with the fruit sauce.
