Special Mote

Glicerio Cruz - Restaurant - Titilaka

 In Titilaka, a charming boutique hotel in Peru, you can taste the olives of the head on the terrace at the edge of Lake Titicaca!

We call "mote" in Peru a grain of white corn without skin which was removed by boiling. The variety is Cusco is enormous.

Ingredients for 5 persons

500 g of beans
120 g of fresh cheese
200 g red onions
400 g tomatoes
500 g of mote
100 g black olives
2 quail eggs
40 ml vegetable oil
Half a red pepper
2 lemons
Salt and pepper

Preparation

Wash all the ingredients and dry them well.

Peel the beans and let the heat in salted water.
Heat the mote in water with a little salt and let cook as quail eggs.

Chop the peppers, cut the cheese and olives.
Peel tomatoes and chop it by removing the seeds.
Peel, wash and chop the red onions.

In a bowl, mix all ingredients and salt and pepper, put it in lemon juice and oil.

Serve this starter in a bowl, and garnish with quail eggs
