Spicy Thai Chicken marinade

At Topos, the restaurant of the Domes of Elounda, the Michelin starred chef Lefteri Lazarou proposes innovative greek cuisine. Here is a recipe for an fusion dish with asian inspirations

Ingredients serving 4

20 gr. Ginger, chopped
20 gr. Garlic, chopped
35 gr. Chili, deseeded
50 gr. Chinese wine
1 star anise
1 clove
1 lemon grass, shoot
150 ml chicken stock
4tbs coriander, chopped
150 ml yoghurt fresh

Preparation

Sweat the garlic, ginger, and chili and add the wine to deglaze. Add the stock and simmer

Take off the heat and cool. Strain the mixture and add in the blended coriander.

Add yoghurt and fresh pepper and marinated for 24 hrs!
