The story of a waiter... who became an award-winning chef!
Born in Wales, the Chef Craig Jones opened his restaurant “Cliff “ at Cap Maison in January 2009, which is, the restaurant of Cap Maison Hotel. Cap Maison is a luxury boutique hotel located to the north of the Island of Saint Lucia, the small, volcanic Anglophone Island between Martinique Saint Vincent, and the Grenadines islands. There, at Cap Cliff, nestled in a dramatic landscape, above a cliff overlooking the Caribbean, you can take in the wonderfully atmospheric view against the gentle breeze of the sea while enjoying a refined and innovative Caribbean meal.
Chef Jones began his culinary career as a waiter in a small luxury hotel in Cheshire, England. He quickly fell in love with the noise and smells of the kitchen and eventually got accepted as a chef’s apprentice. He subsequently tuned his craft in the kitchens of various Relais Chateaux and other Michelin starred restaurants in Scotland and England, such as the Longueville Manor, Gravetye Inverlochy Castle & Manor, and Charlton House. Caribbean Cuisine At the Cliff in Cap Maison, Chef Jones offers an innovative menu inspired by Caribbean cuisine, with plenty of fresh local produce and seafood, all easy to find on this tropical island. His specialties include Caribbean buttered lobster served with mascarpone and parmesan gnocchi, chicken fingers with caramelized plantains and sweet creamed corn. Chef Jones has also created a healthy menu for children which differs from the traditional plain chicken nuggets and French fries. He uses only fresh organic ingredients. Chef Jones always prefers to wear a blue apprentice apron as a reminder that he is constantly learning on the job. His menu changes and reflects his commitment to continuous innovation. Always reinventing! On Sunday afternoon, Chef Jones presents his weekly Lobster Lunch, a rich and take based on the crustacean theme. The Cliff Bar The Cliff bar is the ideal place to admire the sunset while sipping a cocktail. There, the same philosophy prevails as in the restaurant. The concept is a "fresh bar" using local seasonal ingredients to make cocktails which compliment the sea vista. The Cliff bar offers a wide range of rums , 28 to be precise, all from the nine islands of the Caribbean. The Cap Maison wine cellar The extensive wine list offers over 170 different wines from around the world, including a large selection of wines served by the glass. The wine cellar can store a large number of bottles under optimum conditions, with controlled temperature to ensure the quality of every bottle: from the house wines (an excellent Pinot Black) to fine wines (Chateau Petrus). You can privately rent the lounge in the wine cellar. The perfect place for wine lovers, this intimate lounge seats up to 14 people, and is ideal for special occasions with family and friends. In addition, the wine tastings and private dinners are also organised and served in the cellar.
